Apple Raisin Rice Pudding Recipe
- Vegetable cooking spray
- 1/2 c. Minced apples
- 1/2 c. Raisins
- 3 c. + 2 tsp skim lowfat milk, divided
- 1/2 c. + 1 Tablespoons sugar, divided
- 1/3 c. Short-grain rice, uncooked
- 1 Tbsp. Cornstarch
- 1 x Egg, lightly beaten
- 1 tsp Vanilla
- 1/2 tsp Cinnamon
- Coat a medium nonstick skillet with cooking spray.
- Place skillet over medium high heat till warm.Add in apples and raisins; saute/fry 1 minute.
- Set aside.
- Combine 3 c. lowfat milk, 1/2 c sugar, and rice in a large saucepan; bring to boil.
- Cover, reduce heat, and simmer 15 min.
- Combine cornstarch and remaining 2 tsps.
- of lowfat milk, stirring well; add in to the rice mix.
- Bring to boil, and cook 1 minute, stirring occasionally.
- Remove from heat.
- Gradually stir in about 1/4th of the warm rice mix into the egg; add in to remaining warm mix, stirring constantly.
- Stir in apple mix and vanilla.
- Pour rice mix into a 1 qt baking dish coated with cooking spray.
- Combine remaining 1 Tablespoons sugar and cinnamon; sprinkle over rice mix.
- Place baking dish in a large shallow pan; add in warm water to pan to a depth of 1 inch.
- Bake at 325F for 1 hour and 15 min.
- Remove dish from water; let cold 30 min before serving.
