Apple Raisin Rice Pudding Recipe

  1. Coat a medium nonstick skillet with cooking spray.
  2. Place skillet over medium high heat till warm.Add in apples and raisins; saute/fry 1 minute.
  3. Set aside.
  4. Combine 3 c. lowfat milk, 1/2 c sugar, and rice in a large saucepan; bring to boil.
  5. Cover, reduce heat, and simmer 15 min.
  6. Combine cornstarch and remaining 2 tsps.
  7. of lowfat milk, stirring well; add in to the rice mix.
  8. Bring to boil, and cook 1 minute, stirring occasionally.
  9. Remove from heat.
  10. Gradually stir in about 1/4th of the warm rice mix into the egg; add in to remaining warm mix, stirring constantly.
  11. Stir in apple mix and vanilla.
  12. Pour rice mix into a 1 qt baking dish coated with cooking spray.
  13. Combine remaining 1 Tablespoons sugar and cinnamon; sprinkle over rice mix.
  14. Place baking dish in a large shallow pan; add in warm water to pan to a depth of 1 inch.
  15. Bake at 325F for 1 hour and 15 min.
  16. Remove dish from water; let cold 30 min before serving.
