Orange Dijon Salad
- 1 packages mixed field greens
- 1/4 slice red onion
- 1/3 cup pecans
- 1/4 packages dried cranberries
- 1/4 cup shredded parmesan and romano
- 1 tbsp lemon juice
- 1 1/2 tbsp apple cider vinegar
- 1 tbsp whole grain dijon mustard
- 1 1/2 tsp honey
- 2 tbsp extra virgin olive oil
- 1 1/2 peeled oranges
- Layer lettuce, onion, cranberries, pecans, and cheese in a large bowl.
- In a separate small container (I usually just use a cup!)
- squeeze juice from 3 or 4 orange slices.
- Get messy use your hands!
- Layer remaining orange slices on salad.
- Don't worry about it looking pretty, we're tossin' it together in a minute!
- Mix in the remaining ingredients into small container with orange juice.
- Whisk with fork.
- Pour dressing on salad.
- Adding a little at a time as you toss the salad.
- The lettuce should be shiny with dressing, but not drenched!
- Advice: taste the dressing as you go.
- The taste should vary depending whether you enjoy mild, tangy, or fruity dressings.
- Make it your own!
- You can also add other fruits and/or nuts!
- I suggest apples, grapefruit, walnuts, or cashews!
- Enjoy with a nice chicken dish and your favorite cabernet or merlot!
