Orange Dijon Salad

  1. Layer lettuce, onion, cranberries, pecans, and cheese in a large bowl.
  2. In a separate small container (I usually just use a cup!)
  3. squeeze juice from 3 or 4 orange slices.
  4. Get messy use your hands!
  5. Layer remaining orange slices on salad.
  6. Don't worry about it looking pretty, we're tossin' it together in a minute!
  7. Mix in the remaining ingredients into small container with orange juice.
  8. Whisk with fork.
  9. Pour dressing on salad.
  10. Adding a little at a time as you toss the salad.
  11. The lettuce should be shiny with dressing, but not drenched!
  12. Advice: taste the dressing as you go.
  13. The taste should vary depending whether you enjoy mild, tangy, or fruity dressings.
  14. Make it your own!
  15. You can also add other fruits and/or nuts!
  16. I suggest apples, grapefruit, walnuts, or cashews!
  17. Enjoy with a nice chicken dish and your favorite cabernet or merlot!
