Chili and Rice
- 2 slices Bacon, Chopped (optional)
- 1 package Ground Beef (1 1/2 To 2 Pounds)
- 1 whole Large Onion, Chopped
- 1 can (14 Oz. Size) Diced Tomatoes
- 1 package Dry Chili Seasoning Mix, 1 Ounce Packet (I Use McCormick)
- 1 can Tomato Sauce, 14oz
- 1 cup Water
- 3 cups Cooked Rice
- Optional Garnish: Shredded Cheese
- If using bacon, fry it in a large pot over medium heat until crispy.
- Then add ground beef and onion.
- Cook over medium heat until meat is browned.
- Add tomatoes (use plain or seasoned), chili seasoning and tomato sauce.
- Add water (add more or less depending on how you like your chili).
- Let this simmer for at least 10 minutes.
- Serve over the cooked rice with cheese sprinkled on top.
- I have used flavored tomatoes, added green chiles, added cinnamon, added beans, added more chili powder, etc.
- Make this your own by adding and omitting.
- The basic recipe is meat, chili mix and water Ive tweaked it into what works for our family.
- It feeds a crowd (or a few teenage boys) very inexpensively.
- Side note: I grew up eating the basic version over rice with soy sauce (no cheese).
- Still a favorite, but strange to outsiders.
