3 Way Bran Muffins Recipe
- 1 c. flour
- 1/3 c. brown sugar
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 x egg beaten
- 3/4 c. lowfat milk 1 c for peanut variation
- 1 c. 100% Bran
- 3 Tbsp. oil
- Preheat to 400 degrees.
- Oil 12-15 muffin c..
- In bowl, combine flour, sugar baking pwdr, salt and soda.
- In small bowl, blend together egg, lowfat milk, and oil; stir in Bran.
- Let stand 5 min.
- Add in ingredients for desired flavor; mix til well combined.
- Stir into flour mix just to blend.
- Don't over mix.
- Fill muffin c. 2/3 full.
- Bake 20-25 min.
- Cold on rack.
- For peanut butter muffins: add in 1/3 c peanut butter and 2 Tablespoons honey
- For zucchini muffins: add in 1/2 c grated zucchini, 1/3 c minced walnuts, 1/2 tsp cinnamon.
- For molasses-cheddar muffins: add in 1/2 c grated cheddar cheese, 2 Tablespoons molasses, and 1/4 tsp ginger.
- Makes 15 muffins
