3 Way Bran Muffins Recipe

  1. Preheat to 400 degrees.
  2. Oil 12-15 muffin c..
  3. In bowl, combine flour, sugar baking pwdr, salt and soda.
  4. In small bowl, blend together egg, lowfat milk, and oil; stir in Bran.
  5. Let stand 5 min.
  6. Add in ingredients for desired flavor; mix til well combined.
  7. Stir into flour mix just to blend.
  8. Don't over mix.
  9. Fill muffin c. 2/3 full.
  10. Bake 20-25 min.
  11. Cold on rack.
  12. For peanut butter muffins: add in 1/3 c peanut butter and 2 Tablespoons honey
  13. For zucchini muffins: add in 1/2 c grated zucchini, 1/3 c minced walnuts, 1/2 tsp cinnamon.
  14. For molasses-cheddar muffins: add in 1/2 c grated cheddar cheese, 2 Tablespoons molasses, and 1/4 tsp ginger.
  15. Makes 15 muffins
