Mike's Chicken and Potato Soup

  1. Prepare vegetables first.
  2. Finely chop the peppers (all kinds), cilantro, garlic, and both kinds of onion.
  3. set aside.
  4. Cop carrots and celery to whatever size you desire.
  5. I like them chopped pretty small.
  6. Cut chicken breasts into small bite size pieces.
  7. In saute pan, put the stick of butter and the olive oil to heat up on med/hi!
  8. Wait until this is completely hot.
  9. When hot, add chicken and cover with Mrs.
  10. Dash.
  11. Cook for 3 minutes on one side and then flip over.
  12. Add more Mrs.
  13. Dash and cook for 3 minutes on the other side.
  14. Add chicken and spices (ie: peppers, garlic, onions, cilantro) to tall soup pan.
  15. Add Let them saute together for a few minutes.
  16. Then add equal parts chicken broth and water.
  17. I dump the broth in then fill the container up with water and put it inches Let that simmer on med/hi.
  18. Peel and cut potatoes into boiling squares (bite size).
  19. Add potatoes, corn, carrots, celery, and Rotel to soup.
  20. Bring to a boil on med/hi.
  21. You will know the soup is done when potatoes are soft.
