Creamy Pineapple Salad
- 3/4 c. crushed pineapple
- 1 envelope Knox gelatine
- 1/2 c. diet lemon-lime soda
- 1/2 c. diet orange soda
- 2 oz. cream cheese, cubed
- dash of salt
- sweetener to taste
- pinch of lemon rind
- 1 tsp. lemon juice
- Pour lemon-lime soda in blender and sprinkle with gelatine. Soften for 1 minute.
- Heat orange soda to boiling, add to blender and run until gelatine is dissolved.
- Add remaining ingredients except pineapple.
- Run until smooth.
- Pour into bowl and chill until consistency of unbeaten egg whites; stir in pineapple.
- Pour into mold and chill until set.
- Whole recipe equals lunch portion of cheese and one fruit.
- (Could also count towards dinner protein.)
- Could use diet ginger ale in place of lemon-lime soda.
