Corn and Pumpkin Stew

  1. Place the corn in a blender or food processor and puree.
  2. Transfer the corn into a heavy-bottomed pot and add the rest of the ingredients except for the ground nuts.
  3. Bring to a boil and then simmer for 25 minutes or until the pumpkin is tender.
  4. Add more water only if necessary.
  5. Add the pine nuts and stir.
  6. Bring back to a boil.
  7. The mixture should be very thick.
  8. Taste and adjust the seasonings.
