Pineapple Nut Cookies(Pineapple Is Good In Cookies.)
- 1/2 c. shortening
- 1/2 c. sugar
- 1/2 c. fresh pineapple
- 2 c. flour
- 1/4 tsp. salt
- 1/4 c. nuts, chopped
- 1/2 c. brown sugar
- 1 egg, well beaten
- 1 tsp. vanilla
- 1/4 tsp. baking soda
- 1 tsp. baking powder
- 1 stick butter
- 1 c. flour
- 1 tsp. or more vanilla, anise, rum or whiskey
- 3 eggs
- 3/4 c. sugar
- In a bowl, beat all ingredients together.
- Heat pizella iron, and when ready, drop a large tablespoon of batter or 1/4 cup. Close iron and let pizellas cook for a few seconds.
- Remove with a fork.
- Once cooled, they can be stacked on top of each other in a container for storage.
- (I have used an empty oatmeal can.)
- They can also be wrapped in foil for safe keeping.
