Brown Lentil Soup
- 1 cup brown lentils
- 4 cups water
- 1 tomatoes (crushed or pureed)
- 2 chopped garlic cloves
- 1 grated piece ginger (about 1 inch)
- 14 teaspoon turmeric
- 1 tablespoon lemon juice
- 1 pinch chopped cilantro leaf
- salt
- 1 tablespoon oil or 1 tablespoon butter
- 1 teaspoon cumin seed
- 14 teaspoon ground red chili pepper
- Make the lentils:.
- Soak lentils in water for 1 hours.
- Boil lentils until foam develops.
- Scoop off and discard the foam.
- Add all ingredients and boil for 30 minutes.
- Add cilantro and 1 TBSP lemon juice.
- Make the seasoning:.
- Heat 1 TBSP oil in a small pan or pot.
- Add the cumin seeds until they pop.
- Add red pepper and quickly stir.
- Pour this mixture into the pot of lentils.
- Stir and serve hot.
