Curried Pea Dip

  1. Warm the coconut oil in a skillet over medium heat.
  2. Add the onions and saute until golden, 6 to 8 minutes.
  3. Add a pinch of salt and the garlic and cook for another 3 minutes.
  4. Stir in the curry powder and peas and cook for 2 minutes.
  5. Remove from the heat and cool slightly.
  6. Place the pea mixture in a food processor with the yogurt and 1/4 cup water and puree until smooth, adding more salt to taste.
  7. To serve, transfer the dip to a bowl, top with a spoonful of yogurt and stir a few times to create a swirl.
