North Meets South Chowder(Cold Weather Favorite)
- 6 c. diced potato
- 2 Tbsp. oil
- 1/2 c. finely chopped salt pork
- 1 1/2 c. chopped onion
- 2 cans creamed corn
- 1 can kernel corn
- 1 qt. half and half
- 3 Tbsp. flour
- 1 1/2 Tbsp. cornstarch
- paprika
- salt and pepper to taste
- your favorite corn bread recipe
- Bring to boil and cook until tender the potatoes.
- Drain water until 1-inch below potatoes.
- In frying pan, add oil and salt pork and cook until tender.
- Add all corn without liquid from kernel corn.
- Add pork and onions.
- Set aside 1/2 cup half and half; add rest to potatoes.
- To half cup, add flour and cornstarch.
- Stir until dissolved.
- Add to potatoes; cover.
- Cook over low heat until thickened.
- Serve with sprinkle of paprika.
- Serve cornbread with, or for something different.
- Put corn bread in bowl, then add chowder.
