Black Beans With Vinaigrette(Makes 4 Servings)

  1. Drain beans and rinse well.
  2. Put in a large saucepan with water and bay leaf.
  3. Bring to a boil over medium-high heat.
  4. Lower heat, cover and simmer until soft, about 1 to 1 1/2 hours.
  5. Drain beans, remove bay leaf and return beans to saucepan.
