Celery Root French Fries with Remoulade Dipping Sauce

  1. For remoulade: Combine all the ingredients in a mixing bowl and mix until incorporated.
  2. Season with salt and pepper.
  3. Set aside.
  4. For the celery root French-fries: Lightly toss the celery root in the flour.
  5. Dip into the egg mixture, removing any excess.
  6. Turn into the bread crumbs, coating both sides completely.
  7. In a large saute pan, heat the vegetable oil.
  8. When the oil is hot, add the celery root fries, carefully not to over- crowd the fries.
  9. Fry on one side until golden, about 2 to 3 minutes.
  10. Turn over and continue frying until done, about 2 to 3 minutes.
  11. Remove with a slotted spoon and place on a paper-lined plate.
  12. Spoon a small amount of the remoulade onto the plate and pile the fries in the center.
  13. Adjust seasonings with salt and pepper.
  14. Garnish with the Parmesan and chives.
  15. Combine all ingredients thoroughly and store in an airtight jar or container.
  16. Yield: about 2/3 cup
