Sausage Casserole
- 1/2 lb. bulk sausage
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1/2 c. chopped celery
- 1 (6 oz.) pkg. wild and long grain rice mix, cooked
- 4 oz. wild rice or plain white rice, cooked
- 1 can cream of chicken soup (undiluted)
- 1 can cream of mushroom soup (undiluted)
- 1 c. shredded Cheddar cheese
- 1 (4 oz.) can sliced mushrooms, drained
- Brown sausage in skillet; drain.
- Reserve drippings.
- Saute onion, pepper and celery in drippings until done.
- Combine sausage, sauteed vegetables, long grain and wild rice mix (already cooked according to directions, including seasoning mix), other rice (already prepared), soups, cheese and mushrooms.
- Mix well. Spoon into shallow 2-quart casserole dish.
- Cover and bake at 325u0b0 for 1 hour, or until done.
- Very rich.
- Makes a good dish for potluck supper or a side dish for large gathering.
