Greek Chicken Salad
- 3 Tbsp. KRAFT Lite House Italian Dressing
- 1/8 tsp. dried oregano leaves
- 3 oz. boneless skinless chicken breast, cut into strips
- 2 cups mixed salad greens
- 1/2 medium tomato, cut into wedges King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cucumber, peeled and sliced
- 1/4 medium red onion, peeled and sliced thinly
- 2 large black olives, sliced
- 1/4 cup ATHENOS Crumbled Reduced Fat Feta Cheese
- 1 pear Safeway 1 lb For $1.88 thru 02/09
- 1 SNACKWELL'S Cookie - Fat Free Devilsfood
- 8 fl oz (1 cup) drinking water
- Mix dressing and oregano.
- Cook chicken in 1 Tbsp.
- of the dressing mixture in small skillet on medium heat 4 min.
- or until cooked through, stirring occasionally.
- Toss salad greens, tomatoes, cucumbers, onions and olives with feta cheese and remaining 2 Tbsp.
- dressing mixture.
- Arrange on plate and top with chicken.
- Enjoy a pear and a cookie for dessert.
- Serve meal with a glass of water.
