Shrimp Gumbo
- 2 1/2 sticks butter
- 1 c. chopped onion
- 1 c. chopped green pepper
- 1 (10 oz.) can tomatoes
- 1 bay leaf
- 1 Tbsp. rosemary leaves
- 1 tsp. sweet basil
- 1 tsp. leaf thyme
- 1/2 tsp. garlic powder
- 10 c. hot water
- 1 lb. crabmeat (optional)
- 1 1/2 c. flour
- 1 c. chopped celery
- 1 (10 oz.) pkg. frozen cut okra
- 1 Tbsp. salt
- 1 Tbsp. crushed red pepper
- 1 tsp. oregano
- 1 Tbsp. parsley flakes
- 1 Tbsp. Worcestershire sauce
- 2 lb. shrimp, peeled and washed
- Melt butter in 5 1/2-quart Dutch oven; add flour.
- Mix thoroughly.
- Stir mixture continually until very dark brown, but not scorched.
- Add onions, celery, green pepper, okra and tomatoes.
- Blend all ingredients well.
- Add remaining ingredients, except shrimp and crabmeat.
- Stir thoroughly.
- Cook over medium heat for 25 minutes.
- Add shrimp and crabmeat.
- Cook for 20 minutes more.
- Yield:
- 12 servings.
