Shrimp Gumbo

  1. Melt butter in 5 1/2-quart Dutch oven; add flour.
  2. Mix thoroughly.
  3. Stir mixture continually until very dark brown, but not scorched.
  4. Add onions, celery, green pepper, okra and tomatoes.
  5. Blend all ingredients well.
  6. Add remaining ingredients, except shrimp and crabmeat.
  7. Stir thoroughly.
  8. Cook over medium heat for 25 minutes.
  9. Add shrimp and crabmeat.
  10. Cook for 20 minutes more.
  11. Yield:
  12. 12 servings.
