Fried Baked Grits
- Butter, for baking dish
- 4 cups milk
- 1 1/2 cups quick cooking grits
- 1/4 pound plus 4 tablespoons unsalted butter
- 1 1/2 teaspoons salt
- Dash of hot pepper sauce
- 1 1/2 cups grated cheddar or rat cheese
- 3 eggs, well-beaten
- Butter, for frying
- Large rectangular ovenproof baking dish
- Butter the baking dish, set aside.
- Preheat the oven to 350.
- In a large saucepan, bring the milk and 2 cups water to a boil over high heat.
- Pour in the grits, stirring constantly until moistened.
- Remove from the heat and stir in the butter, seasonings, cheese and eggs.
- Pour into the prepared baking dish and bake for 1 hour.
- Let cool to room temperature and cut into diamond shapes.
- Pan fry in butter until golden on both sides.
