Orange-Glazed Chicken Oriental
- 1/3 c. orange juice
- 1 Tbsp. soy sauce
- 2 tsp. honey
- 1 1/2 tsp. cornstarch
- 1 tsp. grated peeled fresh ginger
- 2 tsp. vegetable oil
- 2 Tbsp. sliced green onion (white part only)
- 2 garlic cloves, minced
- 1 (1/2 x 2-inch) orange peel strip, slivered
- 1 lb. boneless, skinless chicken breast meat, cut into 1/2 x 2-inch pieces
- freshly ground pepper
- salt (optional)
- Whisk the first 5 ingredients in small bowl until cornstarch and honey dissolve.
- Heat oil in large heavy skillet over high heat. Add onion, garlic and orange peel and stir-fry until fragrant, about 1 minute. Add chicken and stir-fry until opaque, about 3 minutes. Stir orange juice mixture. Add to skillet and stir-fry until chicken is cooked through and liquid thickens, about 4 minutes. Season with freshly ground pepper and salt, if desired.
- Serve with rice (and, if desired, thinly sliced green part of onion remaining).
