Brandied Apricot Sauce
- 1/2 cup chopped dried apricots
- 1-1/4 cup water
- 2 tbsp. castor sugar
- 1/4 tsp. cinnamon
- 2 tsp. brandy
- Combine apricots, water, sugar and cinnamon in a pan, simmer, covered, about 5 minutes or until apricots are soft; cool.
- Blend or process apricot mixture with the brandy until smooth.
