Quick Mini pizzas
- 8 English muffins, or as many as you want per person
- 8 slice of mozzarella cheese
- 1/3 cup your favorite meat. Peperoni slices cut into quarters, ground Italian sausage etc.
- 1/2 cup grated parmesan
- 1 cup pizza sauce
- 1 14 oz. can of tomato sauce
- 2 tsp of minced garlic
- 2 tsp of Italian seasoning
- 1 tsp Red wine vinegar
- 1 Salt and pepper to taste
- 1 Simmer on low - med heat till thickened and reduced
- 1/3 cup mushrooms sliced small
- 1/3 cup thin sliced red onion
- 1/3 cup diced bell peppers
- 1/3 cup sliced fresh tomatoes
- 1 Try artichokes, kalamata olives and fetta cheese for a Mediterranean style veggie
- 8 oz if fresh mozzarella, sliced
- 1 large heirloom tomato or 2 small-med. sliced
- 4 fresh basil leaves, julienned
- 1 Broil with mozzarella and tomato (see below) then top with fresh basil before serving
- Half the English muffins and toast them lightly
- Spread each muffin with sauce and a slice of cheese
- Add your favorite toppings
- Place muffins on baking sheet and broil till cheese is melted and bubbly, about 1-2 minutes
- Enjoy!
