Corn Bread Pie
- 1 lb. ground beef
- 1 large onion
- 1 small piece garlic
- 1 can tomato soup
- 2 c. water
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. whole kernel corn
- 1 Tbsp. chili powder
- 1/2 green pepper, chopped
- 1 c. cooked brown beans
- 3/4 c. corn meal
- 1 Tbsp. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 egg
- 1 Tbsp. melted shortening
- Saute beef, onion, garlic and green pepper until slightly brown.
- Add soup, water, salt, pepper, corn, beans and chili powder.
- Simmer 15 minutes.
- Place mixture in 1 1/2-quart casserole.
- Combine remaining ingredients.
- Mix well.
- Spoon corn bread mixture over meat mixture.
- Bake at 400u0b0 about 25 minutes. Makes 6 to 8 servings.
