Goat Cheese Brazil Nut Salad

  1. In a small bowl mix vinegar, mustard, and honey; season to taste with favorite salt-free seasoning.
  2. In a separate small bowl, blend crumbled goat cheese with cottage cheese.
  3. Lay lettuce on plate and top with cheese mixture.
  4. Arrange chopped red pepper in a circle around salad.
  5. Place sliced nuts on top of the cheese and drizzle with vinegar mixture.
  6. Enjoy a banana for dessert.
