Vegan Colorful Spaghetti(Serves 2)
- 1/2 lb. spaghetti or linguini
- 1/4 c. olive oil
- 1 clove garlic, minced
- 1 medium onion, coarsely chopped
- 2 medium ripe tomatoes, peeled and coarsely chopped
- 1 lb. fresh spinach, cleaned and torn into pieces
- 1/4 c. Parmesan cheese, grated (optional)
- salt and pepper to taste
- Cook pasta according to directions on package.
- Heat oil in large frying pan and saute garlic and onion over medium heat for 2 minutes or until slightly golden.
- Add tomatoes; stir and cook for 3 minutes.
- Add spinach; toss with tomato mixture until spinach is just wilted.
- Turn off heat.
- When pasta finishes cooking, drain, then toss with vegetables over medium heat until coated.
- Season with salt and pepper to taste.
- Serve hot.
