Chesapeake Surimi
- 1 medium onion, sliced top to bottom into thin slivers
- 2 teaspoons olive oil
- 2 teaspoons Old Bay Seasoning
- 8 ounces surimi
- 3 tablespoons panko breadcrumbs
- Saute onion in olive oil until translucent and soft.
- Add old bay seasoning and cook for another minute.
- Chop or break surimi into bite size pieces.
- Add to onion and cook until just heated through.
- Add any additional old bay seasoning or additional seasonings to taste (such as white wine Worcestershire sauce, freshly ground black pepper, garlic powder, or small pinch of thyme) .
- Turn off heat and add panko breadcrumbs and serve.
