Apple Cake
- 2 c. sugar
- 1 1/4 c. oil
- 2 eggs, well beaten
- 3 c. sifted flour
- 1 1/2 tsp. cinnamon
- 1 1/2 tsp. nutmeg
- 1 tsp. vanilla
- 3 c. chopped apples
- 1 c. chopped nuts
- powdered sugar
- 8 eggs, separated
- 2 3/4 c. sugar
- 1 lb. softened butter or margarine
- 8 Tbsp. coffee cream
- 2 tsp. vanilla extract
- 3 1/2 c. well sifted flour (cake flour is best)
- Beat whites of eggs until stiff; add 6 tablespoons of the measured sugar and continue beating until sugar is dissolved.
- Put whites in refrigerator until balance of cake is mixed.
- Cream butter until soft.
- Add sugar a little at a time until well creamed.
- Then add 2 of the yellows at a time, beating well after each addition.
