Herbed Potato Bake
- 1 1/2 lb. potatoes, pared and diced
- 3 Tbsp. butter
- 1 onion, chopped
- 1/4 tsp. garlic powder
- 2 c. bread crumbs
- 1/4 c. parsley flakes
- 1 tsp. celery seed
- 3/4 c. Parmesan cheese
- 8 3/4 oz. can corn kernels, drained
- 1 egg, lightly beaten
- paprika
- 1 tsp. celery seed (extra)
- Boil potatoes until tender; drain and mash well.
- Melt butter in saucepan; add onion and garlic and cook until onion is soft. Combine the mashed potatoes, onion mixture, bread crumbs, parsley, 1 teaspoon of celery seed, Parmesan cheese, corn and egg.
- Mix well.
- Spread potato mixture into greased casserole dish. Sprinkle with paprika and extra teaspoon of celery seed.
- Bake at 350u0b0 for 40 minutes.
