Thai pasta salad
- 3 cup uncooked bite sized pasta (bow tie, shell, etc. )
- 12 oz broccoli slaw
- 1 sweet red pepper, diced
- 1 orange bell pepper, diced
- 6 green (spring) onions, thinly sliced
- 1/2 tsp Red pepper flakes (optional), or to taste
- 1/3 cup creamy peanut butter
- 1/3 cup rice vinegar
- 2 tbsp soy sauce
- 1 1/2 tbsp peanut oil
- 1 tsp sesame oil
- 1 tbsp honey
- 1/4 tsp ground ginger
- Cook pasta according to package directions.
- Drain and rinse with cold water.
- Drain well.
- Mix pasta and vegetables in large bowl.
- Whisk dressing ingredients and toss all together.
- Chill.
- Serve with chopped peanuts, if desired.
