Snow Peas With Almonds and Lemon Balm for 2
- 2 tablespoons sliced almonds
- 4 ounces fresh snow peas
- 1 tablespoon chopped fresh lemon balm leaves
- 18 teaspoon cracked black pepper
- 18 teaspoon kosher salt
- 1 tablespoon grapeseed oil (original recipe specifies olive oil)

- Note: if you prefer, the snow peas can be lightly steamed instead of stir fried.
- Fresh green beans are also a good substitute for the snow peas.

- Toast the almonds by placing them in a small dry skillet over medium-high heat.
- Shake or stir, watching carefully, until they are golden brown.
- Remove from heat; transfer to a small bowl.
- String the snow peas.
- If desired slice lengthwise into thinner strips.
- After the almonds have cooled, stir in the lemon balm, black pepper and salt.
- Heat the grape seed oil in the same small skillet over medium-high heat.
- Add the snow peas; stir fry for 4-5 minutes.
- Reserve 1 Tablespoon of the almond-lemon balm mixture and stir the rest of it into the snow peas.
- Transfer to a serving dish and sprinkle with the remaining almond-lemon balm mixture.
- If desired and available, garnish the snow peas with a few lemon balm blossoms.
