Spicy Mandarin Hunan Pork

  1. Mix first 4 ingredients; set aside.
  2. Heat 1 Tbsp.
  3. oil in wok or large skillet on high heat.
  4. Add eggplant; stir-fry 1 min.
  5. Cover; cook on medium-high heat 2 min.
  6. or until eggplant is evenly browned, stirring occasionally.
  7. Remove from wok; cover to keep warm.
  8. Add remaining oil to wok; heat on high heat.
  9. Add peppers, ginger and garlic; stir-fry 30 sec.
  10. Add meat; stir-fry 5 to 6 min.
  11. or until done.
  12. Stir in eggplant and dressing mixture; bring to boil on medium-high heat, stirring frequently.
  13. Spoon onto platter; top with coriander.
