Spicy Mandarin Hunan Pork
- 1/4 cup Kraft Mandarin Orange with Sesame Dressing
- 2 Tbsp. hoisin sauce
- 1/2 Tbsp. soy sauce
- 1 tsp. lemon zest Safeway 4 ct For $5.00 thru 02/09
- 2 Tbsp. oil, divided
- 1 Chinese eggplant, chopped Safeway 1 ea For $1.28 thru 02/09
- 1 red pepper, chopped
- 2 jalapeno peppers, seeded, chopped
- 1 piece (1 inch) gingerroot, peeled, thinly sliced
- 2 cloves garlic, thinly sliced
- 1 lb. (450 g) pork tenderloin, cut into bite-size pieces Safeway 1 lb For $3.99 thru 02/09
- 5 sprigs fresh coriander (cilantro)
- Mix first 4 ingredients; set aside.
- Heat 1 Tbsp.
- oil in wok or large skillet on high heat.
- Add eggplant; stir-fry 1 min.
- Cover; cook on medium-high heat 2 min.
- or until eggplant is evenly browned, stirring occasionally.
- Remove from wok; cover to keep warm.
- Add remaining oil to wok; heat on high heat.
- Add peppers, ginger and garlic; stir-fry 30 sec.
- Add meat; stir-fry 5 to 6 min.
- or until done.
- Stir in eggplant and dressing mixture; bring to boil on medium-high heat, stirring frequently.
- Spoon onto platter; top with coriander.
