Catfish Cakes

  1. Arrange catfish in a lightly greased 13 x 9 x 2-inch baking dish; cover with aluminum foil and bake at 400u0b0 for 20 minutes or until fish flakes easily when tested with a fork.
  2. Drain and flake.
  3. Combine egg, mayonnaise, mustard and next 7 ingredients in a large bowl.
  4. Stir in fish.
  5. Shape into 8 (2 1/2-inch) patties and coat with crushed corn flakes cereal.
  6. Place on paper towels and refrigerate for 1 hour.
