Shrimp Gumbo(Club Member: Lee Ann Mcraney)
- 3 to 5 lb. peeled shrimp
- 1 can crab meat
- 1 to 2 large onions
- 1 large clove garlic
- 1 c. chopped celery
- dash of oregano
- bay leaf
- 1 large can tomatoes
- 2 to 3 c. okra, quick browned
- 2 bell peppers, chopped
- black pepper to taste
- 1 tsp. or more sugar
- Saute chopped onions, celery and bell peppers in small amount of oil.
- Boil shrimp as you would to eat; peel.
- Make very brown roux of at least 4 heaping tablespoons flour and necessary oil. Add all vegetables to shrimp.
- Add water as desired.
- Season to taste and simmer for 1 to 2 hours.
- Ham, boiled chicken or smoked sausage may be used instead of shrimp or may be added in addition to shrimp.
