Chocolate Almond Zucchini Bread Recipe
- 3 c. sifted flour
- 2 c. sugar
- 1 1/4 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon grnd cinnamon
- 1 c. minced blanched almonds
- 1 c. vegetable oil
- 1 teaspoon vanilla
- 3 Large eggs
- 2 (1 ounce.) sq. unsweetened chocolate, melted
- 2 c. shredded zucchini
- Into large bowl, sift together first 6 ingredients.
- Stir in almonds.
- In medium bowl mix oil, vanilla and Large eggs till well blended.
- Stir in melted chocolate till well blended.
- Stir in zucchini.
- Stir this mix into dry ingredients till just moistened.
- Pour batter into greased loaf pan.
- Bake in 350 degree oven for 1 hour and 30 min or possibly till toothpick inserted in center comes out clean.
- Cold in pan 10 min.
- Remove, cold on rack.
- Makes 1 large loaf.
