Festive Barley Salad
- 2 c. barley, cooked and rinsed
- 1/2 c. orzo or pine nuts, bulger wheat or other grain of your choice
- liberal handful fresh chopped parsley
- 2 to 3 Tbsp. fresh chopped oregano or basil
- 1/2 green pepper, diced
- 1/2 c. Bermuda onion, diced
- 2 cloves garlic, minced
- 1/4 to 1/2 tsp. cumin
- 1/2 tsp. salt or seasoned salt
- 1/4 tsp. pepper
- 2 tsp. lemon juice
- 2 tsp. olive oil
- 1/4 to 1/3 c. Christy's Greek salad dressing
- 1 small can sliced black olives
- 1 large tomato
- Toss together all ingredients in order except the last 2.
- Mix well.
- Add black olives and tomato, then toss gently.
- Let marinate an hour or so and serve.
- Can be prepared ahead, just add tomato prior to serving.
