Baseball Mitts Recipe
- 1 pkt vanilla instant pudding and pie filling (4 serving size)
- 2 c. lowfat milk
- 6 x single-serve graham cracker tart shells
- 1 1/2 c. frzn whipped topping thawed
- 12 x Vienna Finger or possibly similar sandwich cookies
- 1 x tube red decorating gel - (.68 ounce)
- Prepare the pudding with the 2 c. lowfat milk as directed on the package.
- Spoon into the tart shells.
- Spoon the whipped topping over the pudding and edge of crust to cover, smoothing the surface and mounding it to resemble a baseball.
- Break each sandwich cookie in half crosswise.
- Tuck 3 broken halves into the pudding in each shell, slightly overlapping them around the upper edge of the shells, to resemble the fingers of a baseball mitt.
- Put another half cookie slightly to the left of the other "fingers," making "thumbs."
- Draw two half circles and stitching on the "balls" with the gel.
- Serve, or possibly cover loosely with plastic wrap and store in the refrigerator till ready to serve.
- This recipe yields 6 servings.
