Creamy Fruit Salad Mold

  1. Drain fruit cocktail; reserve juice.
  2. Add enough water to juice to make 1 cup.
  3. Heat to boiling.
  4. Remove from heat and add gelatin. Stir until dissolved.
  5. Cool; add 2/3 cup undiluted evaporated milk. Chill until consistency of unbeaten egg whites.
  6. Blend in fruits and nuts.
  7. Chill remaining 1/3 cup undiluted evaporated milk in refrigerator tray until ice crystals form around edges of tray. Whip until stiff (about 2 minutes).
  8. Add lemon juice and whip until very stiff (about 1 minute).
  9. Fold whipped evaporated milk into gelatin mixture.
  10. Pour into a 6-cup mold.
  11. Chill 2 hours before serving.
  12. Makes 6 cups.
