Special Chicken Stuffing
- 2 small or 1 large pkg. Stove Top stuffing
- 10 slices bread
- 3/4 c. melted butter
- 1 c. water
- 2 1/2 c. cooked chicken (cut up)
- 1/2 c. onion (chopped fine)
- 1 c. celery (chopped fine)
- 3/4 c. mayonnaise
- 3/4 tsp. salt
- 3 eggs
- 1 1/2 c. milk
- 1 can chicken or mushroom soup
- 1 can water or 2 c. chicken broth
- grated mild or sharp cheese
- Combine first 4 ingredients and toss until moist.
- Put half mixture in bottom of 15 x 18-inch greased pan.
- Mix next 5 ingredients and set aside.
- Put chicken mixture over stuffing, then top with remaining stuffing.
- Beat 3 eggs and 1 1/2 cups milk. Pour over mixture in pan and refrigerate overnight.
- Remove from refrigerator 1 hour before serving.
- Add chicken or mushroom soup (diluted with 1 can water or 2 cups chicken broth).
- Pour over mixture.
- Bake at 350u0b0 for 40 minutes, uncovered.
- Remove and grate mild or sharp cheese over top and return to oven for 10 minutes.
