Roasted Pork Chops with Apple Onion Gravy

  2. Preheat oven to 350 degrees F. 2.
  3. Brush pork chops on both sides with extra virgin olive oil.
  4. Rub with seasonings and roast in a shallow pan on a rack for one hour at 350 degrees F. 3.
  5. Saute the onions and apples in large a heavy bottomed frying pan on medium high heat with the oil, until the onions begin to caramelize and turn golden.

  7. Add garlic and continue to saute another 1-2 minutes, just until the garlic begin to soften and turns fragrant.

  9. Stir in salt, pepper, herbes de provence, and butter.

  11. Once butter has melted, sprinkle the all-purpose flour over everything and stir well to incorporate.

  13. Add the chicken stock, brown sugar, and Worcestershire sauce.

  15. Let simmer on low while pork chops roast.

  17. Gently mash half the apples to incorporate into the sauce.
  18. 10.
  19. Serve over the roasted pork chops.
