Sugared Lemon Cookies
- 13 cup butter, softened
- 12 cup sugar
- 1 lemon, zest of
- 1 egg, beaten
- 4 tablespoons lemon juice
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon milk
- confectioners' sugar, for dusting
- Preheat oven to 325F.
- Lightly grease several cookie sheets.
- In a mixing bowl, cream together the butter, sugar, and lemon rind until pale and fluffy
- Add the beaten egg and lemon juice a little at a time, beating well after each addition
- Sift the flour and the baking powder into the creamed mixture and blend together.
- Add the milk and mix to form a soft dough
- Pour the dough onto a lightly floured surface and divide into 5 equal pieces
- Roll each piece into a tube and shape into an"S" shape
- Place on the prepared cookie sheet and bake for 15-20 minutes.
- Let cool on a wire rack.
- Heavily dust with confectioner's sugar.
