Thanksgiving Pumpkin Cheesecake Spectacular

  1. Preheat oven to 350F For (175 degrees C)
  2. Combine graham cracker crust in a medium mixing bowl.
  3. Firmly press mixture into one greased 9 inch springform pan or 8x8 inch glass pan.
  4. Combine pumpkin mix in medium bowl and set aside.
  5. Cream cheese mix part 1: Beat cream cheese with an electric mixer until light and fluffy.
  6. Gradually add sugar and mix well.
  7. Cream cheese mix part 2: Add whole egg, egg York and heavy whipping cream to cream cheese mixture.
  8. Beat well
  9. Cream cheese mix part 3: Add vanilla, lemon extract and corn starch to cream cheese mixture.
  10. Beat until smooth.
  11. Add pumpkin mixture to cream cheese mixture.
  12. Mix well.
  13. Pour mixture into pan over graham cracker crust.
  14. Bake at 350F For (175 degrees C) for 50-55 minutes.
  15. Adding in a pan of water while baking can help stop it from cracking.
  16. Do not over bake.
  17. Center maybe liquidy but if sides are done it will firm up as it cools.
  18. Let cheesecake cool on wire rack, then refrigerate.
  19. Combine vanilla, sugar and remaining half pint of heavy whipping cream in a deep mixing bowl.
  20. Use an electric mixer and beat mixture until light and fluffy.
  21. Add a dollop on the side of each plate when serving.
