banana carrot muffins
- 1 1/2 cup flour
- 3/4 cup sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 eggs, separated
- 1 tbsp honey
- 1 zest of 1 orange
- 2 mashed ripe bananas
- 1 cup shredded carrots
- 1/2 cup applesauce
- 3/4 cup chopped walnuts, optional
- preheat oven to 350.
- In large bowl, combine flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In medium bowl, beat egg yolks until light and fluffy.
- beat in honey and orange peel.
- fold in bananas, carrots, and applesauce.
- stir into dry ingredients until just moistened.
- In a small bowl, beat egg whites until stiff peaks form.
- fold into batter.
- fold in nuts, if using.
- bake 25-30 minutes.
