Minestrone
- 1 1/4 lb. beef stew meat
- 1 tsp. salt
- 2 Tbsp. olive oil
- 1 beef bouillon
- 1 1/2 tsp. Italian salad dressing
- 1 (16 oz.) stewed tomatoes and juice
- 1 (15 oz.) kidney beans and juice
- 1 can pitted black olives, drained
- 1 can sliced or diced carrots
- 1 tsp. minced garlic
- 1/4 tsp. pepper
- 3 cans beef broth
- 2 cans water (use broth cans)
- 1 can zucchini squash
- 1 1/2 c. shell macaroni
- Brown meat in olive oil with spices.
- Add broth, water, bouillon and Italian dressing.
- Cover and cook 1 hour.
- Add remaining ingredients except macaroni.
- Add it the last 30 minutes of cooking.
- Serve with hot French bread slices.
