Chinese Noodles with Sesame Dressing

  1. Bring a pot of water to a boil.
  2. Cook noodles until tender according to package instructions.
  3. Drain; rinse under cold water until completely cool.
  4. Transfer to a large bowl; toss with vegetable oil.
  5. In a small bowl, whisk together lime juice, soy sauce, sesame oil, brown sugar, and red-pepper flakes; whisk in cilantro.
  6. Pour over noodles; season with salt and pepper, and toss to coat.
