Oysters Of The Bayou
- 1/2 c. butter or margarine
- 1 large onion, finely chopped
- 3 cloves, garlic, finely chopped
- 1 qt. oysters, chopped into bite-size pieces
- 1 c. oyster liquid
- 1/2 c. evaporated milk
- 1/2 tsp. thyme
- 1/2 tsp. oregano
- 2 Tbsp. parsley
- hot sauce, salt and pepper to taste
- 1 c. Italian bread crumbs
- grated Parmesan cheese
- Saute onion and garlic in butter; add oysters.
- When edges curl, add oyster liquid and milk; stir; add seasonings.
- Fold in bread crumbs.
- Place in a 2-quart casserole or individual dishes; sprinkle lightly with bread crumbs and Parmesan cheese.
- Bake at 350u0b0 for 15 to 20 minutes.
- Serve hot.
- This dish may also be served in large pastry shells.
- Yield:
- 8 servings.
