Cinnamon Fruit And Rice Squares(Yields 6 Servings)
- 1 2/3 c. water
- 2 tsp. ground cinnamon, divided
- 2/3 c. regular cooking rice (uncooked)
- 2 c. orange juice, divided
- 3 Tbsp. sugar
- 1/8 tsp. ground cloves
- 1 c. peeled and coarsely chopped sweet apples
- 3 Tbsp. cornstarch
- 1 c. sliced bananas
- 1 c. seedless grapes
- 1 1/2 tsp. pure vanilla extract
- 6 Tbsp. plain low-fat yogurt
- In a small saucepan, place water and 1/2 teaspoon of the cinnamon; bring to a boil.
- Add rice; return to the boil.
- Reduce heat and simmer, covered, until rice is tender, about 15 minutes; set aside.
- In a medium saucepan, combine 1 1/2 cups of the orange juice, sugar, cloves and remaining 1 1/2 teaspoons cinnamon; bring to a boil.
- Add apples; simmer, covered, for 5 minutes.
- Combine remaining 1/2 cup orange juice and cornstarch.
- Stir into saucepan; cook and stir until thickened, about 2 minutes.
- Add bananas, grapes, vanilla extract and reserved rice; mix well. Pour into a 1 1/2-quart shallow serving dish.
- Cover and chill. Serve cut in squares and topped with yogurt.
