Cinnamon Fruit And Rice Squares(Yields 6 Servings)

  1. In a small saucepan, place water and 1/2 teaspoon of the cinnamon; bring to a boil.
  2. Add rice; return to the boil.
  3. Reduce heat and simmer, covered, until rice is tender, about 15 minutes; set aside.
  4. In a medium saucepan, combine 1 1/2 cups of the orange juice, sugar, cloves and remaining 1 1/2 teaspoons cinnamon; bring to a boil.
  5. Add apples; simmer, covered, for 5 minutes.
  6. Combine remaining 1/2 cup orange juice and cornstarch.
  7. Stir into saucepan; cook and stir until thickened, about 2 minutes.
  8. Add bananas, grapes, vanilla extract and reserved rice; mix well. Pour into a 1 1/2-quart shallow serving dish.
  9. Cover and chill. Serve cut in squares and topped with yogurt.
  10. Contains 202 calories per portion; contains less than 1 gm fat per portion, 1 mg cholesterol per portion and 1 mg sodium per portion.
