Italian Crescent Zucchini Pie
- 4 c. thinly sliced zucchini
- 1 c. thinly sliced onion
- 1/4 c. butter
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. oregano
- 1/4 tsp. garlic powder
- 1/4 tsp. basil
- 1/4 c. parsley
- 1 pkg. crescent dinner rolls
- mustard
- 3 eggs, beaten
- 2 c. shredded Mozzarella cheese
- Heat oven to 350u0b0.
- Saute zucchini and onion in butter until tender (about 10 minutes).
- Add spices and mix well.
- Mix eggs and cheese in separate bowl.
- Butter a large pie pan or quiche dish. Arrange crescent rolls to make a crust.
- Spread a thin layer of mustard on crust.
- Mix vegetables with eggs and cheese and pour onto crust.
- Makes a large pie.
- Bake about 20 to 25 minutes.
