Prize Winning Key-Lime Cake Or Lime-Light Cake
- 1 1/3 c. sugar
- 2 c. all-purpose flour
- 2/3 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 (3 oz.) pkg. lime flavored gelatin (dry)
- 5 eggs
- 1 1/3 c. cooking oil
- 3/4 c. fresh orange juice
- 1/2 tsp. vanilla
- 1 tsp. lemon extract
- 1/3 c. fresh Key lime juice
- 1/3 c. powdered sugar
- whipped cream (garnish)
- lime slices (garnish)
- Preheat oven to 350u0b0.
- Place dry ingredients (first 6) into mixing bowl.
- Add eggs, oil, orange juice, vanilla and lemon extract.
- Beat until well blended.
- Pour batter into a 9 x 13- x 2-inch greased and floured pan.
- Bake 25 to 30 minutes, or until tests done.
