Phyllo Chicken
- 1/2 c. margarine, melted and divided
- 12 sheets phyllo
- 3 c. diced chicken
- 1/2 lb. bacon, cooked and crumbled
- 1 pkg. frozen chopped broccoli, thawed and drained
- 2 c. shredded Cheddar or Swiss
- 6 eggs
- 1 c. light cream or evaporated milk
- 1/2 c. milk
- salt and pepper
- Brush sides and bottom of 13 x 9-inch pan with melted butter. Place 1 sheet phyllo on bottom.
- Brush with butter.
- Repeat 5 more sheets (keep remaining phyllo covered with wax paper to prevent drying out.)
- In bowl, combine chicken, bacon, broccoli and cheese. Spread over phyllo.
- In another bowl, whisk eggs, cream, milk, salt and pepper.
- Pour over chicken.
- Cover with 1 phyllo and brush with butter.
- Repeat remaining phyllo, top and butter.
- Bake uncovered at 375u0b0 for 35 to 40 minutes.
