Homestyle Chili
- 1 cup dry beans, soak overnite. ( i used pinto beans)
- 2 lb ground beef
- 1 medium onion, chopped
- 1 or 2 chili peppers, seeded and chopped
- 1 clove garlic, peeled and minced
- 1 can 28 ounces, crushed tomatoes
- 2 tbsp chili powder
- 2 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1/4 cup cornmeal, for thickening,
- drain soaked beans.
- place in 6 qt pan and cover with water, simmer until tender, about an hour
- crumble meat in skillet with onion, pepper, and garlic.
- brown evenly.
- add meat, tomatoes, and seasonings to beans
- simmer another 20 minutes
- if needed, add 1/4 cup cornmeal to thicken, simmer another 15 minutes
- serve and enjoy
- goes great with fried cornbread.
