Oatmeal Cookies

  1. Preheat the oven to 325F (160C).
  2. Lightly oil two baking sheets.
  3. Stir the oats, brown sugar, and oil in a bowl until well combined.
  4. Add the egg and vanilla extract and mix again.
  5. Drop heaping teaspoons of the batter on the baking sheets, spacing them 1in (5cm) apart.
  6. Flatten them slightly with the back of a fork.
  7. Bake for 1518 minutes, or until golden.
  8. Let the cookies cool on the baking sheets for 12 minutes.
  9. Transfer the cookies to a wire rack and let cool completely.
  10. Variation: Peanut Butter Cookies
  11. Substitute 1 tbsp of rolled oats with 1 tbsp crunchy peanut butter.
  12. Finish and bake as above.
