Home Salad Stuffed Tomatoes
- 1 1/2 c. finely diced baked ham
- 1/2 c. finely diced celery
- 1/4 c. chopped pecans
- 2 Tbsp. chopped pimento stuffed olives
- 1/4 c. mayonnaise
- 1 Tbsp. finely chopped onion
- 4 medium sized tomatoes
- 1 Tbsp. chili sauce
- crisp lettuce leaves
- fresh parsley sprigs
- Mix
- together the ham, celery, pecans, olives and onion in a large
- bowl.
- Stir
- in
- the
- mayonnaise and chili sauce. Placing the stem down on a board, cut each tomato about 2/3 of the way down into 8 wedges.
- Gently push wedges open to allow space
- for stuffing.
- Place
- each
- tomato
- on a lettuce lined plate
- and stuff with ham salad.
- Garnish plates with parsley. Makes 4 servings.
